  8. 1 vanilla bean (3 g).
  9. 3 egg yolks (60 g).
  10. 1 tablespoon of flour (10 g).
  11. 4 tablespoons of sugar (40 g).
  12. 1 tablespoon cornstarch (10 g).
  13. 1 cup whole milk (240 mL).

For the apple filling

  • 5 apples (200 g).
  • 1/2 cup of sugar (100 g).
  • 1/2 teaspoon of cinnamon (2.5 g).
  • 1 tablespoon of butter (10 g).
  • 1 tablespoon of lemon juice (5 mL).

For the surface gloss layer

  • Peach jam (to taste).
  • 1 tablespoon of lemon juice (5 mL).

For the base, we will begin by mixing flour, sugar and salt in a large enough container. Then add the butter and knead everything with your fingers. After this, add the yolk and mix everything until a well-integrated dough forms.

Next, add the water spoonful to spoonful until we have a dough that can knead well and form a ball. Finally, we will wrap that dough ball in transparent film and let it cool in the fridge for at least three hours.

To make the homemade custard, we start by heating milk in a casserole together with the vanilla cut into strips. In a separate bowl, mix the flour, sugar, cornstarch and egg yolks until they are well integrated. It is best to add a little of the hot milk to this mixture so that the ingredients dissolve well.

Meanwhile, we should continue to control the milk and, when it breaks to boil, turn off the heat and remove the vanilla strips. At that time we add the previous mixture and remove everything, preferably with a rod whisk. Do not stop stirring until a dough forms that begins to thicken.

When it has thickened, we will have the pastry cream ready. To finish with it, place transparent film on the pan so that the surface part does not harden. Put the cream in the fridge along with the base of the cake and let it cool completely.


How to assemble the apple pie with cream?

The next step will be to prepare the apples for the filling. For this, we start by preheating the oven to 200 ºC . Meanwhile, we peel the apples in thin slices, removing their hearts.

We then cut them into thin slices and mix them with sugar and cinnamon. It is likely that the apples will suffer oxidation , so if they start to brown, we will add the lemon juice .

We take the cold dough out of the fridge and spread it on an oven mold. The right measure for this apple pie is about 20 centimeters in diameter , covering the walls of the mold completely. Cut the remaining dough and put all the pastry cream in the base.

On the cream, which will have reached almost to the top of the mold, place the apple slices together with small pieces of butter.
